Title: Effects of canning on total nickel content and proximate composition in Tuna Fish in Iran
Abstract:
Forty cans containing fillet from the tuna obtained from Iran southern waters were tested for total nickel concentration before and after canning process. The tuna were harvested off the Iran southern coast during 2018 and weighted between 4.5–7.6 kg. Tuna fillet was packed in cans raw and cans were drained before post-canning analysis. The average concentrations of total nickel found 1.64 ppb in raw samples and 4.20 ppb in the post-canned samples. Although the nickel concentration per gr of tissue was relatively low following canning, the overall amount of nickel in the samples did not change significantly.
