Title: Development of Fresh Handling and Processing Industry of Shallot in Rural Areas for Stabilisation of Shallot Price in Indonesia
Abstract: 
For spices Indonesian preferred shallot (Allium ascalonicum L) rather than onion rather than onion (Allium cepa L). It is very important commodities besides  garlic and chillis. Un-availibity in the market particularly the fresh one would all of sudden increase the price of shallot in the market. The increase price of shallot would increase the price of other commodities, thus shallot is the commodity that inducing inflation in Indonesia. In this review we apply simple fresh handling and processing technology in the rural area of centers of production, to increase the quality of fresh shallot, increase the life of shallot thus can provide buffer of shallot in the market, processed product for longer storage life. For doing that there were some experiments being done to establish technology in the field. (1) Choices of varieties, (2) Fresh handling procedure by using instore dyer, (3) developed a processing tree such as peeled shallot, whole shallot in brine, chopped shallot in brine, dried shallot, and shallot flour.  Shallot varieties preferred for fresh consumption is Bima Brebes. Brebes west java, is also center of production of shallot in Indonesia besides Nganjuk in East Java, and Bima in West Nusa Tenggara and Enrekang in South Sulawesi. Standard for fresh of shallot became object of adulteration, since Indonesian National Standard of onion still mention small size onion. Price of onion in Indonesia is much lower compared to shallot. Among varieties from IVEGRI (Indonesian Vegetable Research Insitute)  the best for drying was Kuning. However, kuning was not yet available in center of production yet. Thus, for processing purposes it has been used also Bima Brebes. Citric acid has been used for helping the production of whole shallot in brine, shredded shallot in brine, dried shallot and shallot flour. All the optimum condition for storage and processing has been applied in the field as model for integrated agro-processing of shallot. To get very effective an inflation control, the model of agroindustry has to applied nationally.
